The Cave
Within the grounds of our winery lies a remarkable natural cave, uncovered during our construction work. Archaeological research indicates that this cave dates back approximately 3,500 years and was once inhabited by early winemakers. This discovery offers a fascinating glimpse into the ancient traditions of winemaking, providing a profound connection to our historical roots.
The cave’s underground location ensures ideal conditions for wine aging, with perfect temperature, humidity, darkness, and tranquillity. These attributes create an optimal environment for the slow and even maturation of wine, enhancing its aromatic complexity and flavour profile.
Recognising the unique potential of this cave, we decided to use it for aging a highly collectible wine from the Cypriot Maratheftiko variety. Known for its intense fruity aromas and balanced taste, Maratheftiko thrives in this environment. The cave not only amplifies the exceptional qualities of the wine but also adds a rare dimension of historical significance to the final product.
This collector’s Maratheftiko wine epitomises the fusion of ancient wine-making art with the rich heritage and natural beauty of our region, embodying our dedication to producing outstanding wines.
